Culinary Delights
Vienna, Austria's capital, is famous for its history, architecture, fine arts and music. But the city also takes care of creature comforts, as everyone knows who has enjoyed a slice of apple strudel or Sacher torte in one of Vienna's numerous coffeehouses. When Gerhard Kaes came to Chicago in the 1960s, he brought the long tradition of Vienna pastry baking with him. Son and grandson of Viennese bakers, he had learned the trade from childhood.
Having received his diploma as a master baker, Gerhard Kaes came to Chicago where in 1966, together with his Polish-American wife Hedwig, he opened the Vienna Pastry Shop at 5411 West Addison Street. Since then, the family business, now led by daughter Kate, has produced baked goods, cakes, and pastry in traditional European style. Even the Chicago Tribune recently complimented the “flaky, perfectly sweet apple strudel” at the Vienna Pastry Shop. Wine producing is another Austrian tradition, which goes back to the Celts who had grown grapes on the protected terraces of the valley of the Danube river. Today, Austria produces approximately 240 million liters of wine per year. Based on this tradition, Manfred Bauer began his wine-import business Wein Bauer Inc. in 1980 in Franklin Park, IL. Currently, he imports nearly 200 wines from all over the world, including Austria. Coffeehouse history in Europe began in the middle of the seventeenth century, when the first coffeehouse opened in Venice. The culture of roasting and brewing coffee came from Constantinople, now Istanbul, and reached Vienna at the end of the seventeenth century, after the second siege of Vienna by the Turks. The comfort and special character of coffeehouses made them spread very quickly. Already by the mid 18th century one could find everything that is still part of the tradition today: newspapers (which Starbucks now offers worldwide), pool and card tables, and the legendary glass of water was offered with the coffee. The Viennese love for coffeehouses is unchanged; today one finds more than 2000 coffee houses, espresso bars, and coffee and pastry shops in Vienna. Thomas Meinl, descendant of an Austrian family of coffee-roasters, brought the first Viennese coffee house to Chicago in 2002. The first Julius Meinl Café in the United States is located on the corner of Southport and Addison. Visitors can enjoy Viennese atmosphere and coffee roasted according to the original recipes.
